My pandan raisin muffins

I think they look so pretty. They are slightly green if you notice, for the pandan effect of course. I decided to come up with my own recipe and make slightly more local tasting pastries. I love experimenting and not knowing how the final product will taste. It’s like a surprise I build up for myself. And the truth is, it’s about time someone made english muffins the asian way.

Here I baked a batch of 18. The sad thing about making really nice pastries (yes, I left my modesty in Singapore) is that you want to eat more yourself, but you rather let more people taste them so that they can tell you how good they are. Praising yourself just doesn’t cut it. I used to think the reason I love cooking and baking is because I derive satisfaction from the process and the final product, but now I know the real reason is because I love it when others enjoy my creations and I love compliments!
